You can make an omelet any way you choose and with any flavors you choose. Some choices may work out better than others 😮
This is a cheese and avocado omelet with an un-twist – there is no mixing!
Using a VERY non-stick pan over medium-high heat, sprinkle about 1/2 to 3/4 cup of shredded cheese. A good sharp cheddar works well.
Add your flavors of choice – which in this case is about 1/2 avocado, diced.
Once the cheese is bubbling, add one or two eggs and break the yokes. Spread them around a bit but do not scramble the egg.
Cover and cook over low heat until the egg is nearly cooked. Remove from heat. Leave covered. Wait 3-5 minutes for the egg to finish cooking.
Roll the omelet, plate, and enjoy!
